Recipe of cooking chicken soup

Ingredients:
- 1 whole chicken, cut into pieces
- 8 cups of water
- 2 medium onions, diced
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 3 cloves of garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
In a large pot, add the chicken pieces and cover with water. Bring to a boil over high heat and then reduce to a simmer. Skim off any foam or impurities that rise to the surface.
Add the diced onions, sliced carrots, celery, minced garlic, bay leaf, dried thyme, salt, and pepper to the pot. Stir well to combine.
Allow the soup to simmer for about 1 to 1 ½ hours, until the chicken is cooked through and tender. Skim off any excess fat or impurities that accumulate on the surface during cooking.
Once the chicken is cooked, remove it from the pot and let it cool slightly. Shred the chicken meat into bite-sized pieces using a fork or your hands, discarding the bones and skin.
Return the shredded chicken to the pot and let the soup simmer for an additional 10-15 minutes to allow the flavors to meld together.
Taste the soup and adjust the seasoning with salt and pepper, if needed.
Remove the bay leaf from the pot and discard.
Ladle the chicken soup into bowls, garnish with fresh chopped parsley, and serve hot.
