Recipe of cooking Grits with prawns
cooking grits with prawns:
Ingredients:
- 1 cup stone-ground grits
- 4 cups water
- 1 cup milk
- Salt, to taste
- 1/2 cup grated cheddar cheese
- 1/4 cup unsalted butter
- 1 pound large prawns, peeled and deveined
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/4 teaspoon red pepper flakes
- Freshly ground black pepper, to taste
- Chopped fresh parsley, for garnish
Instructions:
In a large saucepan, bring the water to a boil. Gradually whisk in the grits and reduce the heat to low. Cook the grits, stirring occasionally, for about 20 minutes or until thickened.
Stir in the milk and continue cooking for an additional 10 minutes, stirring occasionally. Add salt to taste. If the grits become too thick, you can add more water or milk to adjust the consistency.
Stir in the grated cheddar cheese and butter until melted and well combined. Keep the grits warm while you prepare the prawns.
In a large skillet, heat some oil over medium-high heat. Add the prawns and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the prawns from the skillet and set aside.
In the same skillet, add the minced garlic and cook for about 1 minute until fragrant. Add the lemon juice, red pepper flakes, and black pepper. Stir well to combine.
Return the cooked prawns to the skillet and toss them in the garlic and lemon mixture, making sure they are well coated. Cook for an additional 1-2 minutes until the prawns are heated through.
To serve, spoon a generous portion of the cheese grits onto a plate or bowl. Top with the cooked prawns and garnish with chopped fresh parsley.
