Recipe of cooking fish curry

Ingredients:
- 500 grams of fish fillets (such as cod, salmon, or tilapia)
- 2 tablespoons of vegetable oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 2 green chilies, slit lengthwise
- 2 tomatoes, chopped
- 1 teaspoon of ground turmeric
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1/2 teaspoon of red chili powder (adjust to taste)
- 1 cup of coconut milk
- 1 cup of water
- Salt to taste
- Fresh cilantro leaves, chopped (for garnish)
Instructions:
- Start by cleaning the fish fillets and cutting them into medium-sized pieces. Set them aside.
- Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until they turn translucent.
- Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for another minute or until the raw aroma disappears.
- Add the chopped tomatoes and cook until they soften and turn mushy.
- Now, it's time to add the spices. Sprinkle ground turmeric, cumin, coriander, and red chili powder over the onion-tomato mixture. Stir well to combine the spices with the other ingredients.
- Pour in the coconut milk and water. Stir everything together, making sure the spices are evenly distributed.
- Season with salt according to your taste preferences.
- Gently place the fish pieces into the curry sauce, ensuring they are submerged in the liquid. Cover the pan and let the curry simmer on low heat for about 10-15 minutes or until the fish is cooked through.
- Once the fish is cooked, check the seasoning and adjust if needed.
- Garnish the fish curry with freshly chopped cilantro leaves.
- Serve the fish curry hot with steamed rice or naan bread. enjoy the dish!
