cooking fish curry:

Ingredients:

  • 500 grams of fish fillets (such as cod, salmon, or tilapia)
  • 2 tablespoons of vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, slit lengthwise
  • 2 tomatoes, chopped
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of red chili powder (adjust to taste)
  • 1 cup of coconut milk
  • 1 cup of water
  • Salt to taste

Instructions:

  1. Start by cleaning the fish fillets and cutting them into medium-sized pieces. Set them aside.
  2. Heat the vegetable oil in a large pan or skillet over medium heat. Add the chopped onions and sauté until they turn translucent.
  3. Add the minced garlic, grated ginger, and slit green chilies to the pan. Sauté for another minute or until the raw aroma disappears.
  4. Add the chopped tomatoes and cook until they soften and turn mushy.
  5. Now, it's time to add the spices. Sprinkle ground turmeric, cumin, coriander, and red chili powder over the onion-tomato mixture. Stir well to combine the spices with the other ingredients.
  6. Pour in the coconut milk and water. Stir everything together, making sure the spices are evenly distributed.
  7. Season with salt according to your taste preferences.
  8. Gently place the fish pieces into the curry sauce, ensuring they are submerged in the liquid. Cover the pan and let the curry simmer on low heat for about 10-15 minutes or until the fish is cooked through.
  9. Once the fish is cooked, check the seasoning and adjust if needed.
  10. Garnish the fish curry with freshly chopped cilantro leaves.
