Recipe of cooking kadai paneer

Ingredients:

  • 250 grams paneer (cottage cheese), cut into cubes
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, finely chopped
  • 1 green bell pepper (capsicum), cut into cubes
  • 1 red bell pepper (capsicum), cut into cubes
  • 2 green chilies, slit lengthwise
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons Kadai masala (available in Indian grocery stores) or a mixture of coriander powder, cumin powder, and garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust according to your taste)
  • 1 teaspoon dried fenugreek leaves (kasuri methi)
  • Salt to taste

Instructions:

  1. Heat oil in a large pan or kadai over medium heat. Add the cumin seeds and let them splutter.
  2. Add the chopped onions and sauté until they turn golden brown.
  3. Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add the chopped tomatoes and cook until they become soft and mushy.
  5. Add the kadai masala (or the mixture of coriander powder, cumin powder, and garam masala), turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well blended.
  6. Add the bell peppers (capsicum) and green chilies. Stir-fry for a few minutes until the bell peppers are slightly tender.
  7. Gently add the paneer cubes to the mixture and mix well to coat them with the masala. Be careful not to break the paneer.
  8. Crush the dried fenugreek leaves (kasuri methi) between your palms and add them to the pan. Mix well.
  9. Reduce the heat to low, cover the pan, and let the kadai paneer simmer for 5-7 minutes, allowing the flavors to blend together.
  10. Finally, garnish with fresh coriander leaves.
  11. Serve hot with naan, roti, or rice.
