Recipe of cooking kadai paneer
Kadai Paneer:
Ingredients:
- 250 grams paneer (cottage cheese), cut into cubes
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 2 medium tomatoes, finely chopped
- 1 green bell pepper (capsicum), cut into cubes
- 1 red bell pepper (capsicum), cut into cubes
- 2 green chilies, slit lengthwise
- 1 tablespoon ginger-garlic paste
- 2 teaspoons Kadai masala (available in Indian grocery stores) or a mixture of coriander powder, cumin powder, and garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust according to your taste)
- 1 teaspoon dried fenugreek leaves (kasuri methi)
- Salt to taste
- Fresh coriander leaves for garnishing
Instructions:
- Heat oil in a large pan or kadai over medium heat. Add the cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
- Add the ginger-garlic paste and sauté for a minute until the raw smell disappears.
- Add the chopped tomatoes and cook until they become soft and mushy.
- Add the kadai masala (or the mixture of coriander powder, cumin powder, and garam masala), turmeric powder, red chili powder, and salt. Mix well and cook for a few minutes until the spices are well blended.
- Add the bell peppers (capsicum) and green chilies. Stir-fry for a few minutes until the bell peppers are slightly tender.
- Gently add the paneer cubes to the mixture and mix well to coat them with the masala. Be careful not to break the paneer.
- Crush the dried fenugreek leaves (kasuri methi) between your palms and add them to the pan. Mix well.
- Reduce the heat to low, cover the pan, and let the kadai paneer simmer for 5-7 minutes, allowing the flavors to blend together.
- Finally, garnish with fresh coriander leaves.
- Serve hot with naan, roti, or rice.
